Beef and Arugula with Raspberry Chipotle Dressing Recipe

Nutrition Note : A rich source of vitamins A and C and iron, arugula is a nice complement to the sweet, salty, and spicy flavors of this dish. If the flavor of arugula is too sharp, substitute spinach, watercress, or Belgian endive.

Beef and Arugula with Raspberry Chipotle Dressing Ingredients:

  • 12 ounces boneless beef sirloin steak cut in 1 inch beef-arugula
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 cup fresh raspberries
  • 2 tbsp. white wine vinegar or cider vinegar
  • 1 tbsp. canola oil
  • 2 tsps. Honey
  • 1 tsp. chopped canned chipotle chilli peppers in in adobo sauce*
  • Dash salt
  • 6 cups arugula leaves
  • 1 4-oz. package goat cheese (chevre), cut up or crumbled

  • 1 pound boneless beef top sirloin steak, cut 1 inch thick grilled-beef-panzanella
  • 1 cup reduced-calorie balsamic vinaigrette salad dressing
  • ½ of a 1-pound loaf whole grain crusty bread cut into 1-inch-thick slices
  • 2 medium yellow, green, and/or red sweet peppers, quartered
  • Non-stick cooking spray
  • 2 cups cherry or grape tomatoes, halved if large
  • 3 ounces part-skim mozzarella cheese, cubed
  • 1 tablespoon snipped Fresh mint leaves (optional)

  • 1 large onion, chopped (1 cup)
  • 1 large green sweet pepper, seeded and chopped (1 cup)
  • 5 cloves fresh garlic halved
  • 2 tbsp. dried oregano, crushed
  • 1 tsp. crushed red pepper
  • ½ tsp. sea salt or salt
  • 5 cups cooked white or brown rice
