Cream of Chicken Soup

Cooking Tips  : Tarragon adds a delicate anise flavor to this tasty soup. If you can’t find tarragon, use parsley for a fresh taste.

Serves 4

Cream of Chicken Soup Ingredients:

  • 1/2 stick unsalted butter cream-of-chicken-soup_0
  • 1 large onion, chopped
  • 10 1/2 oz/300 g cooked chicken, finely shredded
  • 2 1/2 cups chicken stock
  • salt and pepper
  • 1 tbsp. chopped fresh tarragon
  • 2/3 cup heavy cream
  • Croutons (optional)
  • 4 thick slices day-old bread
  • 4 tbsp. olive oil
  • fresh tarragon leaves, to garnish

Cooking Tips  : Substitute shrimp or crayfish for the chicken.  If raw, cook until they change color in step 1 and return to casserole near the end to heat through.

Louisiana Chicken Ingredients:

  • 5 tbsp. corn oil louisiana-chicken
  • 4 chicken portions
  • 6 tbsp. all-purpose flour
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 1 green bell pepper, seeded and chopped
  • 2 garlic cloves, finely chopped
  • 2 tsp. chopped fresh thyme
  • 2 fresh red chilies, seeded and finely chopped
  • 400g (14 oz.) canned chopped tomatoes
  • 1 1/4 cups chicken stock
  • salt and pepper
  • corn salad (optional)
  • chopped fresh thyme (for garnish)
