Citrus Duckling Skewers
Cooking Tips : The tartness of citrus fruit goes well with the rich meat of duckling. Duckling makes a delightful change from chicken for the grill.
Makes 12 serving.
Citrus Duckling Skewers Ingredients: |
- 3 skinless, boneless duckling breasts
- 1 small red onion, cut into wedges
- 1 small eggplant, cut into cubes
Marinade :
- grated rind and juice of 1 lemon
- grated rind and juice of 1 lime
- grated rind and juice of 1 orange
- 1 garlic clove, crushed
- 1 tsp. dried oregano
- 2 tbsp. olive oil
- dash of Tabasco sauce
Cooking Instructions: |
- Cut the duckling into bite-size pieces. Place in a non-metallic bowl with the prepared vegetables.
- To make the marinade, place the lemon, lime, and orange rinds and juices, garlic, oregano, oil, and Tabasco sauce in a screw-top jar and shake until well combined. Pour the marinade over the duckling and vegetables and toss to coat. Let marinate in the refrigerator for 30 minutes.
- Preheat the grill. Remove the duck and vegetables from the marinade and thread them onto pre-soaked wooden skewers, reserving the marinade.
- Grill the skewers on an oiled rack over medium-hot coals, turning and basting frequently with the reserved marinade, for 15-20 minutes, or until the meat is cooked through. Alternatively, cook under a preheated broiler. Serve at once.
