Cooking Tips : It is best to buy packages of smoked salmon slices for this recipe because they lend themselves to folding more easily than freshly sliced salmon. This recipe would also work very well with smoked trout.

- Fold the slices of smoked salmon, making 2 folds accordion-style, so that they form little packages.
- To make the vinaigrette, whisk the mustard, garlic, dill, vinegar, and seasoning together in a small bowl.
- Gradually whisk in the olive oil to form a light emulsion.
- Heat a ridged grill pan over medium heat until smoking.
- Add the salmon packages and cook on one side only for 2-3 minutes or until heated through and seared from the pan.
- Meanwhile, dress the salad greens with some of the vinaigrette and divide between 4 serving plates.
- Top with the cooked smoked salmon, cooked side up. Drizzle with the remaining dressing.
- Serve, garnished with a few sprigs of fresh dill and a mixture of lemon, lime, and orange slices.
