Lettuce-Wrapped Meat

Cooking Tips  : Serve the ground meat and lettuce leaves on separate dishes: each guest then wraps his or her own package

Serves 4

Lettuce-Wrapped Meat Ingredients:

  • generous 1 cup ground pork or chicken lettuce-wrapped-meat
  • 1 tbsp. finely chopped Chinese mushrooms
  • 1 tbsp. finely chopped water chestnuts
  • salt and pepper
  • pinch of sugar
  • 1 tsp. light soy sauce
  • 1 tsp. rice wine or dry sherry
  • 1 tsp. cornstarch
  • 2-3 tbsp. vegetable oil
  • 1/2 tsp. finely chopped fresh gingerroot
  • 1 tsp. finely chopped scallions
  • 1 tbsp. finely chopped Szechuan preserved
  • vegetables (optional)
  • 1 tbsp. oyster sauce
  • few drops of sesame oil
  • 8 crisp lettuce leaves, to serve

Cooking Instructions:

  • Mix the ground pork with the Chinese mushrooms, water chestnuts, salt, pepper, sugar, soy sauce, rice wine, and cornstarch. Blend well until all the ingredients are thoroughly combined.
  • Heat the vegetable oil in the preheated wok or large skillet.
  • Add the ginger and scallions to the wok or skillet, followed by the ground meat. Stir-fry for 1 minute.
  • Add the preserved vegetables, if using, and continue to stir-fry for 1 minute.
  • Add the oyster sauce and sesame oil, blend well, and cook for a further 1 minute, or until the juices can clear. Transfer the mixture to a warmed serving dish.
  • To serve, place about 2-3 tablespoons of the mixture on a lettuce leaf, and roll it up tightly to form a small package. Eat with your fingers.
